Norwegian Rice Porridge (Risegrøt).


Risgrøt if not Risengrynsgrøt basic English term would be, Rice porridge. One of the delicious breakfast treat that you can ever have in Norway. It’s creamy, salty and sweet and commonly served with a sprinkle of cinnamon, sugar and some dried cranberries on top.  Also, I would like to add some pistachios just too add a punch to the porridge.

It usually served during the Christmas Eve. Topped with whipped cream and raspberry sauce. The interesting fact is there will be an almond hidden in the desert and the person who finds it wins a marzipan candy as a reward. More than a game it’s the best time of the year that family could gather around the Christmas table and enjoy the time with their Loved ones.

Here in Norway there’s special rice to make it but if someone would like to make it, try the paella rice; it both has the same texture.

Don't waste your time by just looking at the picture and dreaming for a cosy time. 
Let's do it. 

Ingredients: 
3/4 cup of risgrøt rice (If not paella rice)
1 1/2 cup of water
2 1/2 cup of milk  (I/m using 3% fresh milk)
01 tbs of butter
01 tbs of honey 
01 tbs of sugar 
01 tsp of salt (if necessary)

For topping:
Cinnamon powder 
Dried cranberries
A hand full of pistachios
A dollop of butter

Directions:
  • In a tall pot, add rice and water and bring to a boil. Lower the heat to a gentle simmer, cover and leave for 10 minutes, or until all the water is absorbed.

  • Add 1 cup of the milk, stir, cover and leave until the consistency thickens. Add a little more milk every time the porridge’s consistency thickens – approximately every 5-10 minutes or so. Repeat until all the milk is used, porridge is thick and rice is tender. The entire process should take about 40 - 45 minutes.

  • Add butter, honey, sugar, salt, and vanilla extract and stir well.

  • Turn the heat off and serve porridge in bowls topped with a small pat of butter, a little cinnamon powder, dried cranberries and pistachios. 

Imagine sitting next to a fireplace with a candy cane stick in a hot chocolate and a risgrøt topped with whipped cream and raspberry sauce oooooh that's heaven. 😘 😘 That's what you call a perfect meal.
